Our
boutique winery allows for attention to detail over
every step of our winemaking
Our Winery has been specifically designed to enable
us to reflect and capture our unique terrior and site
specific vineyard sites. Each vineyard block has numerous
small individual tanks in order to separate the slightest
variance as we reflect our elevated mountain vineyards
sites.
This allows us to focus on achieving uncompromising
quality of every tank and barrel. Small lot production
of batch ferments of just one ton, specific to our
winery, results in each lot receiving personalized
care in order to maximize each wine’s potential.
Traditional, Old World methods of hand harvesting,
small barrel lot production, native yeast fermentation
and minimal intervention allow our unique wines to
express specific grape characteristics and provide
a quality framework for each of them.
All grapes are handpicked only in the early morning
during cooler weather, placed into lug boxes (smaller
quantities reduce compaction and damage to the fruit)
and hand - sorted on sorting tables. All pressing
cycles are gentle and only free - run juice is used.
Our winemaker adds New World improvements and refined
techniques to maximize quality and expression. This
allows each wine with minimal intervention to reach
its fullest potential of varietal character, structure,
complexity and elegance.
