2006 CELLAR SELECTION MERLOT/CABERNET SAUVIGNON

Origin: Stellenbosch
Variety: 63% Merlot 37% Cabernet Sauvignon
Vineyard/Soil: Region; 620 metres above sea level.
Predominantly decomposed granite
Harvest Date: As per variety. Merlot commencing mid February 2006 and Cabernet Sauvignon finishing in early April 2006.
Yield: 5 tons/ha
Harvest stats: Grapes harvested at 23.5ºB to 24.5ºB
Vinification: Fermentation initiated in open top fermentors and underwent a series of punch downs and pump over’s until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 12 months in French oak barrels of which 30% was new. Balance 2nd and 3rd fill barrels.
Bottled: Bottled in November 2007
Analysis: Alcohol 14.5%, TA 5.9 g/litre, pH 3.52, RS 3.3 g/litre
